Ruby Joy Jameson – Chef / Owner
Starting off at 14 working for her aunt’s catering service as a side job around school in Aspen Colorado, Ruby was doing what she had always wanted to do and found herself at home. Eventually branching out to start her own catering company, it became a way of life; although RubyJoy found herself as a bartender, bar manager and food and beverage manager in high-end establishments. She also obtained her Cicerone certification, kitchen manager’s certifications, has extensive wine and cigar knowledge and put her savvy in flavor pairing to work, competing in high level mixology competitions, way back before the term “mixologist” became part of the contemporary vernacular. Ruby’s passion for the industry lead her to amass the majority of her knowledge and skills on the job and through self teaching coupled with apprenticeships along the way with her favorite local chefs wherever she’s been. The move to mexico was in 2012. That’s when RubyJoy’s Saucy Company was first created, making organic sauces ranging from pasta marinaras, bbq sauces, salad dressings to mustards and more. She sold at the Farmers markets and food festivals both locally and all over mexico and also had her products placed in many stores. Catering started back up in those days simply by word of mouth and in early 2017, RubyJoy’s Delivery Restaurant, Catering and Event Services was officially opened and she has turned her dreams to reality and continuing to expand her knowledge in cuisine styles, nutrition and food photography while growing and
Derek Ruiz – Partner / Beverage Director
In addition to being an integral part of daily operations and running the bar program for catering and events, Derek acts as online technician- in charge of managing the website, ordering platform and digital marketing- and essentially helps out wherever and whenever he can. Derek has dual US/Mexican citizenship and was was raised in California and started working in restaurants from the ground up: dishwasher, bus boy, expediter, server, bartender, floor manager, bar manager and owner. Derek has extensive knowledge in wine and spirits/mixology as well as guest hospitality and restaurant operations. In 1999 Derek moved to SMA to be closer to his father, for the love of the culture and to strengthen the connection to his Mexican heritage where he had his first job behind a bar at one of the most popular bars in town and eventually went back to California in 2001. Upon his return to San Miguel after 12 years in Napa and San Diego, California, Derek took the Bar Manager position at The Restaurant for nearly two years. Meanwhile he started “Productos con Madre” brand of vegan, almond-based dips coming in many delicious flavors. He sold his products at the Farmers markets and food festivals both locally and around Mexico. The sauces are still available through RubyJoy’s and are in various stores. RubyJoy and Derek met at La Pulga market In San Miguel selling sauces side by side and then started sharing tables at all the other food festivals and markets becoming great friends. Ruby started bringing Derek into catering jobs that wanted bar service and later on in the beginning of 2017 they became a couple and merged their lives and companies.
Roberto Hegel – Chef / Kitchen Manager
Roberto Hegel – Chef and Kitchen Manger. This bright young Guatemalan is a professionally trained and talented chef, restauranteur, baker, food photographer and RubyJoy’s right hand man with the ability to multitask and keep up with the fast pace and long hours that comes with the territory of being a small growing company with a lot of big things going on. RubyJoy loves to dabble in many styles of cuisines; Roberto’s knowledge and willingness to learn is a key ingredient for closely working with Ruby and her ongoing vision, her passion of pushing past the comfort zone of food familiarity especially when catering, providing custom menus and service styles to fit every guest needs. Not everyone possesses the skill set necessary to succeed in all these areas but Roberto has got it down.
